I have finally found a salmon cake that is a true salmon cake without a bunch of unneeded ingredients. They are delicious. I kept the recipe intact but made a side sauce with nonfat yogurt, a smidge of prepared horseradish granulated garlic and dill. I’m on Weightwatchers and 2-2oz cakes: 1 SP, including sauce. I liked the adding mayo to the cakes idea and so I added about half of the entire dressing to the cakes themselves before I cooked them. So good! Hearts of palm are good in the salad for adding a little extra substance too.

I added some of the caper juice to the sauce as well as some smashed up avocado in place of some of the mayo and it was wonderful. I used panko instead of plain breadcrumbs, made the cakes with raw salmon as directed, and used a whole egg instead of two whites. The texture was perfect crispy golden on the outside and tender in the middle.

Do not use canned salmon. Mine turned out pretty rubbery. The sauce we delish though!

I would definitely make this again. I made it exactly as directed and did not feel like the cakes were rubbery or anything less than delicious. I didn't have as many capers as I needed, so I added a little of the juice and threw in some dried dill in hopes of making up for any lost flavor. I made these last night and they were great. Light and not heavy they are great for a summer dinner or lunch. I did cook my fish to be safe and only did 4 tbsp of capers. I did not make the sauce but next time I will. I did have some mustard with honey and dill which was great with the cakes.

My husband made this for me today, for Mother's Day. He made a mistake and added the mayonnaise to the salmon. We thought this would ruin the dish, but as it turned out - it was AMAZING! He didn't cook the salmon first, but just made the balls as instructed with the addition of the mayo. Not rubbery at all. I will definitely make again, and will continue this error. Starting with raw salmon you are always going to get rubbery, tough patties. Crab meat is already cooked, so they are not the same in recipes. Having the salmon already cooked and flaked, the patties are tender and delicious!

Followed the directions exactly - light flavors and my 2 year old and 4 year old cleaned their plates. We opted to serve this dish with asparagus and rice in lieu of the salad however, we made the dressing and served it on the side as a sauce. Recipe was very good - not exceptional, but something that we'll be making again and again!


The ingredients you'll need

The only ingredients absolutely needed for this recipe are canned salmon and eggs. The rest of the ingredients are very flexible. These are the basic ingredients you'll need (the exact measurements are listed in the recipe card below):

Canned salmon: Use boneless skinless salmon, and drain it very well.

Eggs: I use large eggs in most of my recipes, this one included.

Mayonnaise: I prefer mayonnaise made with avocado oil over other types of mayonnaise.

Dijon mustard: This traditional French mustard is creamier, thicker, and less vinegary than yellow mustard.

Minced garlic: Mince it yourself, or use the stuff that comes in a jar. Both work in this recipe.

Kosher salt and black pepper: If using fine salt, you should reduce the amount you use, or the patties could end up too salty.

Dried thyme: Make sure it's fresh - a stale spice can easily ruin a dish.

Chopped parsley: Cilantro is also very good in this recipe.

Olive oil for frying: I love cooking with this delicious oil. But if you'd rather use an oil with a higher smoke point, you can use avocado oil instead.


Paleo & Whole30 Salmon Cakes with Zucchini

These Whole30 salmon cakes are just the thing to make if you are short on time. They only take 15 minutes to make from start to finish, and they are moist enough to eat on their own without needing to dip them in anything!

My biggest pet peeve is fish cakes that are dry and have you reaching for a drink that closest to you to keep it down. The zucchini and the mayonnaise in these Whole30 salmon cakes actually provide so much moisture while the coconut flour and eggs help them the cakes bind together so they are sturdy and tasty.


Preparation

Dijon Mayonnaise

Step 1

Combine egg yolk, Dijon mustard, and lemon juice in a blender. Blend on high, leaving the lid partially open, until smooth. With motor running, slowly pour in oil in a thin stream blend until combined. Season to taste with salt and more lemon juice, if desired. Set aside 1/3 cup for salmon cakes. Stir dill into remaining mayonnaise. Place in small bowl cover and chill.

Step 2

Preheat oven to 400°. Brush salmon with oil. Place salmon in an 8x8" baking dish and bake until flesh is just opaque, about 12 minutes let cool. DO AHEAD: Salmon can be cooked 1 day ahead. Wrap in plastic and keep chilled.

Step 3

Place potatoes in a medium saucepan add water to cover by 2 inches and season with salt. Bring to a boil over high heat reduce heat and simmer until potatoes can be easily pierced to the center with the tip of a knife, 5–10 minutes. Drain potatoes and pass through ricer into a large bowl set aside.

Step 4

Remove any bones and skin from cooked salmon and discard place flesh in a medium bowl. Using a fork, gently pull apart fish into large flakes. Line a baking sheet with parchment paper set aside.

Step 5

Lightly beat egg and egg yolk in a small bowl to blend. Stir egg mixture, dill, scallions, lemon zest, and 1 tsp. salt into reserved potato purée until just combined. Fold in reserved 1/3 cup Dijon mayonnaise and flaked fish. Season to taste with salt and black pepper or red pepper flakes, if desired. Using a 1/3-cup measuring cup, scoop mounds of batter onto prepared baking sheet. Cover loosely with plastic wrap and chill for at least 1 hour and up to 4 hours.

Step 6

Heat a large skillet or a griddle over medium-low heat coat surface with 1 Tbsp. oil. Shape salmon cakes into 1/2-inch-thick rounds. Working in batches, wiping skillet clean after each batch, and coating skillet with 1 Tbsp. oil each time, cook salmon cakes, gently flipping with a flat spatula halfway through, until lightly browned, about 5 minutes per side. Serve with remaining Dijon mayonnaise alongside.
