Pork, in all its forms, is my favorite "vegetable". We like to go out to the grill as often as possible, and the skewers are not missing from the barbecue

The images I post are from various grills, but as "main actors" are the indispensable skewers.

  • 1 kg lean meat (I also prefer a little fat)

  • 3-4 onions
  • 1-2 yellow and red bell peppers

Cut the meat into suitable cubes. Peel the onion and cut it into 4, then peel 1-2 leaves. Tomatoes are also cut into 6, depending on how big they are. The pepper is cut into the right pieces.


On special skewer sticks, alternately put meat, onions, peppers, red peppers, fill the skewer. Season with a mixture of salt, pepper and thyme and place on the hot grill.

Cut the meat into cubes. Cut onions into thick slices. In a bowl, mix the pork with the onion.

Add olive oil, wine, lemon juice, oregano, garlic, bay leaves, salt and pepper. Mix all ingredients well.

Then let the meat grind overnight.

Cut the tomatoes in half and remove the seeds and juice. In a bowl, mix a little olive oil with salt and pepper. Add the finely chopped tomatoes.

Cut the peppers into quarters and remove the seeds. Then place the pork, onion and peppers on the skewer.

Place the skewers on the hot grill. Leave the skewers on the fire for 15-20 minutes. Grease from time to time with the sauce in which the meat was marinated.

For some time I have been cooking more often with marinated meat, given the fact that by marinating the meat acquires an extra taste, tenderness, flavor and color. This is also the case with these Spanish pork skewers, pinchos morunos. Traditional in southern Spain, they were prepared in ancient times by Moors from beef, lamb or chicken. Today, a lot of pork is made. A meat is tastier the better it is marinated, ie a reasonable time. It is recommended to keep the meat marinated, in the refrigerator, in bags or foil bags sealed so that the air does not enter, approx. 24 hours. Do not keep meat in metal containers. It can increase the time even more, e.g. Marinated meat 3 days in yogurt and spices, is very good. You don't have to look for too many marinade recipes and possibly, just at the beginning, for guidance, because after gaining a little experience you come to the conclusion that the best marinade is the one you make, it is to your taste and you like it, using almost anything as an ingredient. It should only be noted that, in general, three major classes of ingredients are used:
1. Fats - various oils to give and keep the juiciness
2. Acids & # 8211 wine, lemon juice, various vinegars & # 8211 for tenderizing (breaking down meat fibers), taste and aroma
3. Spices & # 8211 for color, flavor and taste.
That doesn't mean you can't marinate meat with just thyme, for example.

Method of preparation

1. Take a piece of pork and cut it into slices about 1 centimeter thick, and then cut with a knife cubes from each slice about 1 centimeter. To make the meat tender and tasty, let the meat cubes marinate in the juice squeezed from a lemon, together with the spices.

2. For the marinade we use fresh dried basil, marjoram, lots of chilli, white pepper and salt. If you do not taste spicy dishes, then put chili paprika instead of chilli. Leave the meat in the fridge to marinate for an hour.

Meanwhile, prepare the vegetables that will sit on the skewer with the marinated pork. We cut the zucchini and the capsicum into cubes, we take out the legs of the mushrooms, and we cut the onion circularly so as to obtain some full rings.

3. Take the meat out of the fridge and build the skewers: on each skewer we put a cube of zucchini, then a square of capsicum, followed by a cube of meat, an onion ring and a mushroom and continue like this until the skewer is full. Season with a pinch of salt and a pinch of spices.

4. Once the skewers have been prepared, they are ready to be placed on the grill or in the oven tray.

Proven recipe for grilled pork skewers

On the grill, you can fry any part of the pork carcass. But the most sought after part is the pork neck. It is difficult to damage it, the main thing is not to keep on coals for a long time.

Steps to follow

The meat is washed and cut into medium pieces.

After this time we take care of the fire for the grill, we arrange the marinated meat on a grill net, or on some needles for stainless steel skewers and we put it on the fire. The fire must be neither too strong nor too small.

The meat must be brown, do not forget to turn it, during cooking, from one side to the other.

Serve these skewers immediately, so warm and with a favorite vegetable salad.

  • Cut the chicken breast into suitable pieces that we put in a ceramic bowl. We cover them, entirely, with milk and put them in the fridge for 1 hour.
  • After 1 hour, drain and move to a separate bowl. In the same bowl add the vegetables cut into pieces of the same size as the chicken pieces. Season them with dehydrated garlic, paprika, salt and pepper and mix well. Cover the bowl with cling film and put it in the fridge for another 1 hour.
  • Form the skewers, alternating the chicken pieces with the vegetable ones. Grease the chicken skewers with a little olive oil.
  • Fry them on the hot grill very very well, 3-4 minutes on each side, or until the meat is completely penetrated.
  • Serve the hot chicken skewers. They are very good!

What do we need for the recipe for poultry, pork, beef or sheep skewers?

Quantities for about 10 skewers:

The meat is washed, cleaned of skins, cut into strips and then cubes of about 2.5-3 cm. The vegetables are cut into slices so that they can be lined up on ticks, but not much larger than the size of the pieces of meat. Mix all the spices, it is ideal to be freshly ground, because they will have a different flavor, then sprinkle everything over the meat. Add the oil and wine or lemon juice (I recommend lemon juice, because it will give a special flavor), mix everything well and let it cool, ideally overnight, but at least 1 hour.
