ingredients: 400g carne de pui sau curcan (piept sau pulpe desosate), 1-2 gutui, 1 ceapă, 100g unt sau ulei, 2 linguri de zahăr, 100ml vin alb demisec, 200ml suc de roşii sau roşii din conservă pasate, 1 linguriţă rasă de făină (opţional), ardei iute (opţional), 1 foaie de dafin, cimbru, mărar, sare, piper

Între timp, punem la caramelizat 2 linguri de zahăr într-o crăticioară şi îl stingem cu cei 100ml vin alb. Atenţie să nu sară caramelul fierbinte în contact cu lichidul şi să vă frigeţi. Adăugăm sucul de roşii, ardeiul iute mărunţit şi dregem sosul cu o linguriţă de făină dacă doriţi să fie mai legat. Dăm sosul într-un clocot scurt apoi îl turnăm peste carnea de pui.

Adăugăm gutuile călite, dafin, cimbru, sare şi piper după gust şi mai fiebem mâncarea înnăbuşit sub capac la foc potrivit încă vreo 10min.
Presărăm mărar şi gata…

Servim cu mămăliguţă sau cu garnitură de orez simplu ori cu paste sau pur şi simplu cu pâine proaspătă. Merg şi nişte murături acre pe lângă sau o salată )

Supa de fazan se prepară similar cu supa clasică de pui sau oricare altă pasăre de curte. Ceea ce impresionează şi o diferenţiază de celelalte, este gustul fin şi atât de bogat al acestei supe.

Cei care au încercat să gătească un fazan sălbatic, au aflat cu siguranţă că în afară de carnea de pe piept, restul păsării are o carne tare şi aţoasă. ”Punem apoi boabele de piper, iar înainte de a închide focul, adăugăm şi rădăcina de pătrunjel, care va da supei o savoare deosebită. La final, punem şi tăiţeii. Dacă dorim, îi putem pregăti în casă din 100 de grame de făină şi un ou. Lăsăm aluatul la dospit pentru 15-20 de minute, după care întindem aluatul şi îl tăiem în fâşii subţiri”, explică Nichi Mărăcine, maestru de artă culinară.
