Spaccatelle, spaghetti, penne, any kind of pasta are good, and something quick and when we don't know what to do and we have some eggplant, tomatoes, it's just good. I hope you like it.

Preparation time: less than 60 minutes
RECIPE PREPARATION Pasta with eggplant and tomatoes:
I prepared a roomy pan with olive oil, peeled eggplant and diced tomatoes, peeled tomatoes and seeds, minced meat and wine.
I seasoned with what I had: salt, curry, basil leaves and left it to do with the lid ajar.
Then I added some more boiled water until it was ready.
I boiled the pasta in salted water and when they were ready I mixed it with eggplant and served it with grated Parmesan cheese on top, only the photo was taken before I grate Parmesan cheese in a hurry.
