A simple, but delicious salad that's a cinch to make. Spaghetti, pepperoni, mushrooms, tomatoes, green olives and Parmesan cheese is tossed in an Italian salad dressing.

  • 450g vermicelli or spaghetti pasta
  • 225ml Italian salad dressing
  • 4 tablespoons red wine vinegar
  • 1 small red onion, chopped
  • 225g pepperoni sausage, chopped
  • 100g mushrooms, sliced
  • 1 (400g) tin chopped tomatoes, drained
  • 50g sliced green olives
  • 20g Italian-style salad seasoning mix
  • 175g grated Parmesan cheese

  1. Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in a serving bowl.
  2. Pour the salad dressing and vinegar over the pasta and mix well. Add the onion, pepperoni, mushrooms, tomatoes, olives, seasoning mix and Parmesan cheese and stir until well combined. Serve at room temperature or cover and refrigerate for several hours or overnight.

This recipe was excellent and very easy to make. I would recommend black olives instead of the green. Makes a large bowl, and believe me if there are any leftovers, it will get eaten!-21 Jul 2003

Although this is good, it's incredibly salty. Next time I'll substitute black olives and omit the dry dressing packet. I also omit onions, tomatoes and mushrooms (no one but me likes them), parm. cheese (can't do dairy) but add zucchini.-19 Jul 2007

This was really good!! Hint: Be sure you look at the serving size!! I made enough for 12 servings -- This was a little to much pasta!! But the flavoring was quite wonderful!!! I recommend this dish!-15 Jun 2003

This pasta salad has two main components: the cold pasta salad itself and the homemade Italian dressing it’s coated in. Here’s what you’ll need to make this cold pasta salad with Italian dressing:

What makes this recipe different than other Italian pasta salad recipes?

In my search for a copycat recipe I never saw one that included the seasoning packets that Kraft included with their box mix.

Other recipes simply had the Italian dressing, but no seasoning or spices were added. Kraft&rsquos version packed a punch of flavor and I sought out to recreate it.

This recipe is a very basic version of Kraft&rsquos Italian Pasta Salad, but the small pieces of dried olives, red bell peppers, and zucchini can be added.

One of the things about pasta salad I love is that it is so versatile. You can add veggies, cheeses, meats, or change up the dressing altogether.

Try them, you won&rsquot be disappointed!


Summer Spaghetti Salad

A family friend made this recipe for a party we had once. My family couldn’t get enough. Everyone devoured it and was begging for the recipe.

Turns out, it was a fairly simple cold spaghetti salad recipe. And, it’s perfect for summer parties because there isn’t any mayonnaise in it. Just lots of fresh veggies, cheese and and a flavorful dressing.

When making this recipe, I’ve found that it’s easiest to use a spaghetti pot like this one. It really does make it easier. And, if you can’t find sliced black olives, just use your egg slicer.

The recipe made a big batch so it’s the perfect pot luck recipe. But, it’s also easy to cut the recipe in half too.

Easy Summer Spaghetti Salad

Easy Summer Spaghetti Salad is a take on one of my favorite childhood recipes. My friend’s mom made this zesty pasta salad recipe every time we went had a family potluck. Her version was much simpler. Tomatoes, olives, cucumbers and linguini noodles tossed in dressing. It was so simple and so good and I have been wanting to recreate it for ages. I debated posting this because how many pasta salad recipes can I possibly post on this blog? Never too many, right?!

I took this easy spaghettis salad recipe to the 4th of July and it was a hit. My 8 year old niece asked to keep a bowl of it for later and you always know you have a hit when even the kids like it! I don’t know what makes this recipe so special, but it really is delicious. I don’t normally put onions or cucumbers in my pasta salad recipes but I think that the crunch they add is what makes this recipe stand out. They add a new texture element to the recipe and that seems to make all the difference.

I have a few classic pasta salad recipes and they all have lots of cheese and meat in it and this one is completely cheese and meatless, making it perfect if you have vegetarians coming for dinner or anyone with a dairy allergy. While it lacks meat and cheese, it definitely doesn’t lack flavor! The secret is the packet of zesty Italian dressing. I wouldn’t substitute any other Italian dressing for this recipe! You can use spaghetti or linguini in this recipe and I love both. Pick whatever you like best or already have on hand!

Tips

  • As previously mentioned, my family seriously loves this salad tossed with my easy Italian vinaigrette dressing, but you can use any dressing you&rsquod like from blue cheese dressing to homemade ranch dressing.
  • You can add other Italian style ingredients to your salad such as sun dried tomatoes, marinated artichoke hearts, banana peppers, prosciutto or kalamata olives.
  • Amp up this salad and serve it as a main dish! I often enjoy this salad topped with my favorite grilled chicken. It&rsquos also great with my foolproof pan fried salmon. And to keep it vegetarian, try adding chickpeas, white beans or even kidney beans.
  • A good quality olive oil is a must to make the BEST vinaigrette!

Over the past few weeks, my house has been the place to be on Sunday evenings. I’ve always made it a point to have a big Sunday Supper that includes family and friends and it looks like things have not changed much. Spaghetti Salad is so easy to make and great to serve any time of the year. This recipe is great to make ahead of when you want to serve it since the pasta will absorb all of the yummy, zesty dressing. Making the salad requires very little cooking. Just prepare the noodles, chop the tomatoes, cucumbers, and onions. Slice the pepperoni, make the dressing, and toss it all together. That’s it!

Recipe: Spaghetti and vegetable salad

This easy recipe is great for those days when you have lots of veggies in the refrigerator. Add in some grilled chicken, and you've got a full meal.

Spaghetti and Vegetable Salad

1 pound box of spaghetti
4 cups chopped vegetables
1 1/4 cup Italian dressing - bottled or homemade

Cook the spaghetti according to the package. Once done, drain and rinse immediately in cold water to cool it down.

Chop up the four cups of vegetables. Just about any vegetable will do, but my family's favorites include red onion, tomatoes, bell peppers, black olives, cucumbers, summer squash and peas.

In a large bowl, combine the pasta and vegetables. Pour the dressing over the salad and mix until it's well combined. This salad is great when it's had time to sit in the refrigerator for a few hours.

If you don't have Italian dressing on hand, make a simple vinaigrette with 3/4 cup olive oil, 1/4 cup red wine or white wine vinegar and some salt and pepper.

Ingredients

Italian Dressing

  • 3 tablespoons red wine vinegar
  • 2 cloves garlic crushed
  • 1 1/2 teaspoons sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh cracked black pepper
  • 1/3 cup olive oil

Spaghetti Salad

  • 12 ounces spaghetti noodles (broken in half)
  • 2 teaspoons olive oil
  • 1 cup chopped English cucumber
  • 1 cup grape tomatoes sliced in half
  • 1/2 green bell pepper chopped
  • 1/2 yellow (or red) bell pepper chopped
  • 1/4 cup sliced black olives
  • 1/4 cup thinly sliced red onion
  • 1/4 cup sliced pepperoncinis
  • 1/3 cup chopped hard salami
  • 2 tablespoons grated Fresh Parmesan

Instructions

  1. In small bowl whisk together red wine vinegar, garlic, sugar, oregano, basil, salt and pepper. Slowly whisk in olive oil.
  2. Cook spaghetti according to package instructions. Drain well and cool.
  3. In a large bowl toss cooked spaghetti with 2 teaspoons olive oil. Add cucumbers, tomatoes, bell peppers, black olives, onions, pepperoncinis, hard salami and Parmesan Cheese. Drizzle with the Italian dressing and toss to coat.

Notes

  • Cook the spaghetti al dente and drain well.
  • The Italian Dressing can be made up to 5 days in advance. Store covered in the fridge. However remove from the refrigerator about 45 minutes prior to making the spaghetti pasta salad.
  • Chop your vegetables fairly fine so they complement the spaghetti.
  • You can use any colored bell peppers. They all lend different flavors and sweetness but they all work in this pasta salad.
  • If you don’t like an ingredient substitute something else or omit it. For instance if you don’t like black olives try capers. If you don’t like red onion try scallions. As I always say don’t throw the baby out with the bath water.
  • For a vegetarian version simply omit the hard salami.
